Lemon Squares:

Sharon Mason wanted the recipe for the Lemon Squares sold by Edgar's Bakery.

Dear S.M.: Here is my recipe for Lemon Squares. It did not come from Edgar's Bakery, but it is a recipe that has been used by our family for a number of years. - Syble Ray Lamons, McCalla. LEMON SQUARES 1 box lemon cake mix 1 stick butter 1 egg

Mix together the cake mix, butter and 1 egg. Spread into a 9-inch by 13-inch baking dish. 2 eggs 1 8-ounce package cream cheese, at room temperature Dash of salt 1 16-ounce box confectioners sugar 1 teaspoon vanilla

Cream together the 2 eggs and cream cheese. Add salt, sugar and vanilla. Spread over the first mixture (in baking dish). Bake at 350 degrees for 40-50 minutes.

Remove from the oven and cool for 30 minutes, then cut into squares. (If desired, sprinkle with confectioners sugar before serving.)

Dear S.M.: A few months ago, E.R. of Birmingham shared the following "favorite recipe" for Lemon Squares. Although it's not Edgar's recipe, it might be one that you will like. - C.R. LEMON SQUARES 2 sticks butter or margarine, melted 2 cups self-rising flour 1/2 cup powdered sugar 4 eggs 2 cups sugar 6 tablespoons flour 6 tablespoons lemon juice

Combine melted butter, 2 cups self-rising flour and powdered sugar. Pat mixture into a crust in the bottom of a 13-by-9-inch baking pan. Bake at 350 degrees for 20 minutes.

In a bowl, mix eggs, 2 cups sugar, 6 tablespoons flour and lemon juice. Mix well and pour over crust. Bake at 350 degrees for 25 minutes. Remove from oven and allow to cool. Sprinkle with confectioners sugar, then cut into squares....
